I was scrolling through Instagram late one night and came across a photo of soup that made me want to get out of bed and go make it immediately. I didn’t do that, but I did add the recipe to the next week’s menu…and then the week after that…and I’ll probably add it to next week’s, too.

I dunno’ who Zach Spuckler is, but he’s a genius, in my estimation. The ingredients for this soup are easy to find, prep is lightening fast, and the end results are so good you want to swim in them.
When I made this soup, I added a little bit more vegetable broth and served the soup over baked potatoes with a little bit of salsa and sour cream on top for an extra dose of deliciousness. This dinner got a big thumbs-up from my kid, who is quite the little food critic.
